Paleo-Keto Meat Roll

My new recipe has the ideal fat to protein ratio, that is necessary for staying in stable ketosis.

It is made with three main ingredients only: beef muscle meat, Parma ham and bone marrow. It is a delicious combination of high quality, tasty and nutritious foods.

Enjoy!



Ingredients (makes 2 servings)

  • 240 g very thin slice of beef (eg. from roast)

  • 40-50 g Parma or other good quality ham, without nitrites and other additives

  • 100 g raw bone marrow (weight without bone)

  • 2 tbsp lard

  • Salt

  • Black pepper (optional)


Method

  • Preheat the oven to 210 °C (fan-normal function).

  • Put the thinly sliced beef on a parchment paper. Salt to taste and place the ham slices on top.

  • Push the marrow out of the bones, cut the pieces in half and place them close to one edge of the meat. Sprinkle with some salt.



  • Roll it up and close the edges with toothpicks. Place on a baking tray and add some lard on top.



  • Roast for about 20-25 minutes, until golden.

  • Serve warm together with the rendered fat.
