PKD BREAD


No dairy, no nut flours, no psyllium, no xantham gum, no cream of tartar, no fiber, no coconut or other plants. Only eggs, meat, pork greaves (cracklings), baking soda and salt.

One bread makes +/- 22 slices and one slice will need about 4 g added fat for the ideal PKD ratio. This can be smoked slab, lard, marrow or any animal fat you prefer.



Slices - 22| Prep Time - 15 minutes| Total Time - 70 minutes

Nutritional value per slice – Calories 120; Fat 10 g; Carbohydrates 0.25 g; Potein 7.2 g


Ingredients:

  • 9 eggs

  • 500 g organic, free-range ground chicken or pork (possibly beef) or 350 g cooked meat

  • 150 g unsalted pork greaves (cracklings)

  • 1 tsp salt

  • 0.5 tsp baking soda (optional)


Method:

  • Preheat the oven to 180 °C

  • Boil the meat in water for 10 minues, drain and let it cool

  • If you use cooked meat, cut it into small cubes



  • Seperate 5 eggs from yolks

  • Whisk the egg whites to soft peaks

  • Blend the egg yolks, the whole eggs and the cracklings really well, until smooth. Add the cold meat and the baking soda and blend further until the whole batter is totally homogenous. You can use a hand mixer as well, but make sure that the batter is smooth and without any meat or crackling pieces.



  • Carefully fold in the whipped egg whites.



  • Spoon the batter into a 26cm x 12 cm cake pan lined with parchment paper.

  • Bake for 45-50 minutes.

  • Let it cool for about 15 minutes before slicing.

  • Store in the fridge or freeze sliced
