
PKD BREAD

No plants, no nut flours, no psyllium, no coconut or other plants. Only eggs, meat, pork greaves (cracklings) and salt. It's carnivore and PKD approved, but as it contains mostly protein. The whole bread will need 115 g extra fat to have the right (2:1) fat to protein ratio. 1/12 slice needs 9.5 g added fat. This can be smoked slab, lard, marrow or any animal fat you prefer.

Ingredients:
8 eggs yolk
9 egg whites
500 g organic, free-range ground chicken or pork (possibly beef)
150 g pork greaves (cracklings)
0.5-1.5 tsp salt, depending on how salty the cracklings are
0.5 tsp baking soda (optional)
Method:
Preheat the oven to 180 °C
Boil the meat in water for 10 minues, drain and let it cool
Seperate 5 eggs from yolks
Whisk the 5+1 egg whites to soft peaks
Blend the egg yolks, the whole eggs and the cracklings really well, until smooth. Add the cold meat and the baking soda and blend further until the whole batter is totally homogenous. You can use a hand mixer as well
Carefully fold in the whipped egg whites.
Spoon the batter into a greased pan
Bake for 45-50 minutes
Let it cool for about 15 minutes before slicing
Store in the fridge or freeze sliced
Enjoy with lard and liver, or smoked slab and sausage.
