This is a great recipe for using up leftover stew, creating a new meal that tastes different and exciting. I have no problem with eating the same food for a few days, but when I still had stew after three days, I felt like I needed a change. So I came up with this idea that turned out to be really delicious. Hope you'll enjoy it too.
It's 100 % animal-based, dairy free, no plant ingredients needed. It has about a 1.5:1 fat to protein ratio and no carbohydrates, so it fits well into your ketogenic meals.

Ingredients - makes 2 servings
For 4 french-style crêpes
4 eggs
100 ml cold water
10g lard
Pinch of salt
Extra lard for frying
For the stew
240 g stew meat
2 tbsp lard
100 ml bone broth
1 tsp salt
20 g roasted bone marrow
Method
For the stew, heat up the lard in an iron pan and pre-fry the meat cubes to give them a nice color and crust. Add one third of the broth and simmer covered for half an hour. Give it a stir and add more broth if necessary. You don't want to boil the meat, so don't add too much broth at a time. Add salt to taste and simmer until tender, for about 2 hours. Let it cool. Blend the meat with the bone marrow until creamy.
For the crêpes, blend all ingredients. Heat up an iron pan, add a bit of lard and fry 4 crêpes.
Place the crêpes next to each other in a way, that they cover 1/3 of the next one. Spread the meat mixture over, roll up and press gently to close well. Cut into 2.5-3 cm pieces.
Preheat the air fryer or the oven to 200 °C. Top the rolls with melted lard and place them next to each other and fry for 6 minutes in the air fryer and 10-15 minutes in the oven, until golden.
Enjoy warm, although they are also delicious cold.
