My new creation for the last week of Advent. These delicious cookies are not too sweet and they taste like orange marzipan. What a pleasure!

Whenever possible, use only organically grown ingredients.

Ingredients:

  • 5 dl finely ground almonds

  • 2 tbsp coconut flour

  • 1 tbsp arrowroot

  • 2 tbsp coconut sugar (or brown sugar)

  • 80 g butter

  • 1 egg

  • pinch of salt

  • 1/2 tsp vanilla powder

  • 2 tsp cinnamon

  • freshly grated zest of one orange

  • freshly grated zest of half a lemon

Mix all the ingredients and chill the dough in the fridge for minimum two hours.

Roll out the dough between two sheets of baking paper. Cut out with heart cutters or any other cutters of your choice. Using a large knife tranfer the cookies to non-stick baking sheets. Bake at 150 °C for about 10-12 minutes. Store the cookies in air-tight container.
