The first Sunday of Advent is right around the corner. The weather is cold outside, and after a fresh walk it feels nice to go home and be cozy on the coach with a good book, a warm drink and a wonderful cookie.
This recipe is a delicious grain-free treat sweetened with honey.
Ingredients for about 20 cookies
150 g ground macadamia nuts
80 g chestnut flour
2 tbsp coconut flour
1/2 tsp baking soda
1 tbsp honey
50 g butter
1/2 tsp cinnamon
1/2 tsp mixed Christmas spices, such as cloves, cardamom, ginger, nutmeg, star anise
zest of a half lemon
zest of a half orange
Mix all the ingredients, form about 18-20 small balls and bake at 160°C until golden, for about 10 minutes.
Tip: you can dip the cookies in melted chocolate. Preferably use 80-85% chocolate.
