Mini Blueberry Clafoutis

Ingredients (makes 2 servings)

  • 3 egg yolks

  • 12 g lard

  • Salt

  • 8 g honey

  • 10 Blueberries (about 15 g) or any other berries of your choice.


  • Preheat the oven to 160 °C, function fan-normal mix.

  • Whisk all ingredients, except for the blueberries, with an electric mixer until homogenous and foamy.

  • Spoon the batter into two small ovenproof forms. Top with the berries.

  • Bake for about 20 minutes, until golden. Serve warm.

Please note, that this dessert contains about 5 g carbohydrates, 8 g fat and 4 g protein per portion. The fat to protein ratio is ideal.
