Mini Blueberry Clafoutis
Ingredients (makes 2 servings)
3 egg yolks
12 g lard
8 g honey
10 Blueberries (about 15 g) or any other berries of your choice.
Preheat the oven to 160 °C, function fan-normal mix.
Whisk all ingredients, except for the blueberries, with an electric mixer until homogenous and foamy.
Spoon the batter into two small ovenproof forms. Top with the berries.
Bake for about 20 minutes, until golden. Serve warm.
Please note, that this dessert contains about 5 g carbohydrates, 8 g fat and 4 g protein per portion. The fat to protein ratio is ideal.
