
This is a great side dish that might be served with fried liver, a steak or grilled fish.
You can make it dairy-free, just substitute the cheese with ground beef and/or bacon pieces. Feel free to experiment.

Serves 4
Ingredients
1 thinly sliced medium white cabbage (approx. 800 g)
1 tbsp salt
1 tbsp lard
2 tbsp butter
2 eggs
100 g strong, raw-milk Swiss cheese, grated
4 tbsp grated Parmesan
1 tbsp sour cream, optional
Put the sliced cabbage in a big glass bowl, mix with the salt and let it sit for 1-2 hours.

Squeeze all the water out of the cabbage and fry it in the lard-butter mix for about 20 minutes until soft and slightly coloured. You can use only lard or only butter if you like. Let it cool.

Whisk the eggs with the sour cream - if you wish to use it -, add the cabbage and the Swiss cheese. Spoon the mixture into a greased baking dish. Bake at 180°C for about 20-25 minutes.
