Best Quiche

Are you looking for an easy and nutritious lunch/dinner recipe? Here is one of them. Serve it with seasonal fresh salad or just enjoy by itself.





Ingredients for 3-4:

  • 400 g organic, grass-fed ground beef

  • 1 organic courgette, grated - use it only when it's in season, otherwise you can leave it out

  • 1 organic carrot, grated

  • 1 parsley root, grated

  • 1 onion, grated - optional in case of sensitivity

  • 2 garlic cloves, grated - optional in case of sensitivity

  • 6 organic eggs, whisked

  • 200g mushrooms, cut into slices

  • bacon slices, nitrite- and additive-free; optional

  • Parmesan or Gruyère cheese, optional

  • salt

  • pepper

  • lard or ghee for frying

Sauté the onion and the garlic together with the vegetables in lard or ghee. Add the meat and fry it until golden brown. Let it cool a bit.

Whisk the eggs in a bowl and add the meat-vegetable mixture to it. Line a baking pan with parchment paper and pour the mixture in the dish. Optionally, you can cover the top with thin bacon slices or grated cheese. Bake in the oven at 180 °C for 30-40 minutes until the eggs are set.
