This is a practical and tasty dish for all of us but especially for those who follow the strict version of PKD. It includes liver, meat and fat but in a slightly different form. Those who are recovered, healthy and have no sensitivities, can whisk 2-3 eggs and pour on the top of the pie before frying. But it tastes very good without eggs as well.
200 g beef liver
300 g ground beef or pork (20% fat)
100 g smoked Mangalica slab (only fat), diced
40 g Pork Jelly (can be replaced with bone marrow)
Black pepper (optional)
Fresh or dried marjoram (optional)
4 tbsp bacon cubes or ground cracklings on top
Preheat the oven to 180 °C.
Put 2 l water in a pot and bring it to boil.
Add the liver and the meat and simmer for 10 minutes.
Discard water, add the jelly.
Add the slab and the spices and blend until smooth.
Grease a baking dish with lard and spoon the blended mixture in. Cover with bacon cubes or cracklings.
Bake for about 30 minutes until golden. Enjoy!
