All-In-One Liver Pie

This is a practical and tasty dish for all of us but especially for those who follow the strict version of PKD. It includes liver, meat and fat but in a slightly different form. Those who are recovered, healthy and have no sensitivities, can whisk 2-3 eggs and pour on the top of the pie before frying. But it tastes very good without eggs as well.


Ingredients

  • 200 g beef liver

  • 300 g ground beef or pork (20% fat)

  • 100 g smoked Mangalica slab (only fat), diced

  • 40 g Pork Jelly (can be replaced with bone marrow)

  • Salt

  • Black pepper (optional)

  • Fresh or dried marjoram (optional)

  • 4 tbsp bacon cubes or ground cracklings on top


Method

  • Preheat the oven to 180 °C.

  • Put 2 l water in a pot and bring it to boil.

  • Add the liver and the meat and simmer for 10 minutes.

  • Discard water, add the jelly.

  • Add the slab and the spices and blend until smooth.



  • Grease a baking dish with lard and spoon the blended mixture in. Cover with bacon cubes or cracklings.



  • Bake for about 30 minutes until golden. Enjoy!
