I love these cookies! They are soft, crunchy, full of cinnamon and they just melt beautifully in your mouth. What a lovely Christmas flavor!
This is a lower sugar, healthier version so everybody can enjoy it with a nice cup of tea or coffee during the Advent season.
Ingredients:
250 g ground almonds
1 egg white
50 g brown sugar
30 g honey
1 tbsp arrowroot
1 tbsp lemon juice
3 tsp cinnamon
salt
vanilla powder
For the topping:
1 egg white, whipped with 1 tbsp ground xylitol or sugar and 1 tsp lemon juice
Mix all the ingredients and form a dough ball, put it in a plastic bag and store in the fridge for 1-2 hours or overnight. Remove from the fridge and roll it out about 1/2 cm thick (or thicker if you wish). Use some ground almonds if sticky. Use a cookie cutter to cut out star shapes. Brush on the egg white mix and let it dry for about an hour.
Bake in a pre-heated oven at 100 Celsius for about 50 minutes.
Store in a stainless steel container or just eat it ;)
