The perfect combination of meat, liver, eggs and marrow. The same ingredients as usually but in a different form. I like variety, for me it makes a difference.
Use the leftover egg whites for other recipes, for example the Keto-Carnivore Bread.
The fat to protein ratio is ideal in this recipe.
If you cannot or don't want to eat eggs, just leave it out and make the filling with more liver and marrow and/or lard.

Ingredients (makes 6 muffins, about 4 servings)
For the "dough"
320 g ground beef
80 g pork greaves
Salt
For the filling
100 g beef liver
80 g bone marrow
2 egg whites
6 egg yolks
Salt
Pepper (optional)
Method
Blend the ground beef with the greaves. Add salt if the greaves are not salted. Put 2/3 of the mixture on the bottom and sides of the muffin forms. Left enough "dough" to cover the muffins.

Blend the egg whites with the liver and the marrow. Add salt and pepper to taste.
Fill the muffins until 2/3 with this mixture. Be careful not to overfill them.
If you can't use up all the fillings, just fry the rest on a pan. It's delicious!
Place one egg yolk in every muffin.

Cover with the rest of the meat-greave mixture.

Bake at 180°C for 20-25 minutes until golden.
