Looking for a cookie idea for the first Sunday of Advent?
Here comes an easy and healthy but most importantly yummy cookie!
To make sure that your food is a high quality, use only organic and fresh ingredients!
Ingredients:
60 g freshly ground poppy seeds
40 g xylitol, erythritol or brown sugar
zest of 1 lemon
zest of 1 orange
freshly squeezed juice of a half lemon
100 g ground almonds
100 g arrow-root
1 tablespoon coconut flour
120 g butter
1 egg
1/2 teaspoon of baking soda
salt
vanilla powder
raspberry jam, sweetened with apple juice, grape juice or stevia
70% chocolate, melted
Combine all ingredients, except the jam and the chocolate. Form a dough, place it in a plastic bag and store in the fridge overnight. Next day roll small, walnut size balls, flatten them with your hand and place them on a baking tray. Use some coconut flour if the dough is sticky. Bake for about 10 minutes at 150 degrees.
When the cookies are cool, spread 1 small teaspoon of jam on one cookie, top it with another one and push them gently together. Dip half of each cookie sandwich into melted chocolate. Place on waxed paper until the chocolate is set.
