Very Low-Carb Macadamia Chocolate-Chip Cookies





Do you like cookies? Do you miss them when you try to eat healthily?

If yes, try this delicious low-carb recipe. It’s grain-free and dairy free, sweetened with honey.

It’s easy and very quick to make.


The main ingredients here are macadamia nuts, which are the best nuts to use in low-carb recipes. They are 88% fat, 8% carbs and 4% protein. They are very high in monounsaturated fatty acids and low in saturated and polyunsaturated fats. And most importantly, they are delicious.



Ingredients:

about 20 cookies, nutrition facts per cookie

  • 300 g macadamia nuts

  • 100 g ground almonds

  • 2 eggs

  • 1 tbsp coconut flour

  • 1 tbsp honey

  • pinch of salt

  • 1/4 tsp vanilla powder

  • 1/2 tsp cinnamon

  • zest of one lemon

  • 50 g 80% chocolate, cut into small pieces










Ground the macadamia nuts in a food processor.



Mix with all other ingredients.



Form small balls and bake at 160 °C for 8-10 minutes.
