Burrito is not part of a low/no carb, high fat and moderate protein diet. Usually I eat very simple dishes, such as fried meat, roasted bone marrow, sunny side up eggs or beef stew. But sometimes I like to play with the same ingredients and create a different meal. Today I felt like having a Burrito:) I made my usual Paleo-Keto pancakes and used them as wraps.
These pancakes I prepare with home-made pork jelly cubes. I always have some in the freezer, as I use it for other recipes too. It gives a really great structure to the pancakes. Ingredients - makes 3 Burritos
Burrito
2 eggs
2 egg whites
25 g lard
25 g pork jelly
2.5 tbsp water
Salt
Stuffing
300 g beef stripes
105 g Mangalica smoked slab or beef tallow
Method
Melt the pork jelly in the water and let it cool slightly.
Blend all ingredients.
Heat a tsp lard in an iron pan and fry three pancakes.
Dice the slab and fry in a separate pan. Alternatively, melt the tallow.
Add the beef and fry quickly on medium-high heat. Salt to taste.
Fill the pancakes, roll up and serve immediately.
