High Fat No Carb Beef Burrito

Burrito is not part of a low/no carb, high fat and moderate protein diet. Usually I eat very simple dishes, such as fried meat, roasted bone marrow, sunny side up eggs or beef stew. But sometimes I like to play with the same ingredients and create a different meal. Today I felt like having a Burrito:) I made my usual Paleo-Keto pancakes and used them as wraps.

These pancakes I prepare with home-made pork jelly cubes. I always have some in the freezer, as I use it for other recipes too. It gives a really great structure to the pancakes. You'll find the recipe on Nicola's Kitchen website, that is full of amazingly creative Paleo-Keto recipes. I highly recommend to check it out.
