High Energy Breakfast Cookies



These, easy and delicious gluten- and dairy-free cookies are low in lectine and they are perfect for breakfast or as a snack when necessary. 

Ingredients: 

4 tbsp coconut flour

8 tbsp tigernut flour

8 tbsp millet flakes or flour

8 tbsp chestnut flour

2 tbsp hemp seeds

2 tbsp raw cocoa powder

2 tbsp flaxseeds

4 tbsp coconut oil

1 egg (optional, can be replaced with more coconut oil and 2 tsp psyllium)

1 tbs raw cacao nibs

salt

cinnamon

You can add 1-2 dates or figs if you want more sweetness.

Mix all ingredients and make about 20 small cookies. Bake at 150 °C for about 15 minutes. Store in a dry place in a cookie jar.
